Or maybe I could just have my leather red dyed?
Or maybe you could do it yourself?

I saw that the BMW folks do that often:

BMW E90 Black to Red Leather

BMW 328i Black to Red leather

Standard Die Colors from Leatherique. They can also custom-match OEM colors. One can ask for the BMW Cinnamon for example.

While your Pathfinder is an 05 so you dont have the longer nose of the 08+ that had been lengthened to accommodate the V8 option, I wonder if a V8 swap isnt still possible for you.
Just a facelift, didn't lengthen the engine bay. Same radiator, etc. in the front for V-6 and V-8, but as SMJ points out the V-8 does have bigger/better brakes.

Here's a thread from someone here who did it on an '05:

There is something of a cottage industry for installing VK V-8's in 05+ Pathfinders, XTerras, and Frontiers. Here's one link for a harness...there's a company out there somewhere that will do the whole thing for you.

I recall someone had done it to a pre 08.
I had just read somewhere that part of the reason for the facelift was accommodating the V8. shrug :)

I've looked at my V6 2006 and my V6 2008 and I think the only reasoning for the change in the rake of the nose is just for aesthetics. The only difference I see behind the nose is that they put the auxiliary trans cooler on the driver's side in 2008, moving it from the passenger side in 2005--2007.
