Exhaust manifolds that crack and timing chains are the only thing I can think of off the top of my head, other than the radiator.

Is the threat of disintegrating catalytic converters less or more than than the other engines?

It does have the EGR performed through the variable cam timing, I believe, but I haven't heard of any issues with it on the V8. If you want to eliminate the issue as well as the cracked exhaust manifolds, I do believe someone was able to get the long-tube headers from Cajun B-pipes designed for the Titan/Armada to work on the V8 R51. The ECM will need to be reprogrammed by UpRev to do this.

The only thing I've come upon is that Nissan's V6 & V8 models tend to leak at the oil filter due to sludge build up from lack of oil service intervals. There's a rubber o-ring behind the oil filter housing that eventually leaks and will need to be replaced. I had to do it on mine is why I found out numerous issues about it. Just something to keep in the back of your mind if you find that there's an oil leak at the front of your vehicle.

I just got an oil change despite previous oil being fresh.

I'm the same as you as and a lot of other car people...just knowing that you did some preventative maintenance after purchasing for that peace of mind.

The oil filter adapter is actually the oil cooler. The "O" ring doesn't necessarily leak because of lack of maintenance or sludge, rather, they just leak on their own. I believe the rings were updated and made a little thicker to prevent the problem in the future. It happens on a lot of Nissans, not just the Pathfinders.

I have a tiny exhaust leak on what I believe to be drivers side.
That is causing my "rasp" on partial throttle.

Not sure if its cracked manifold or leaking somewhere else.

Not terribly bothersome right now at all.
What is the downside on letting it go for a while?

Depending where it is, it could potentially effect the O2 sensor readings if it's near it.
