Overheating exhaust, engine running erratically

1992 V6 Petrol. Once car has warmed up when travelling, engine starts running erratically, jolting, exhaust overheats. Have changed spark plugs, leads, exhaust.
No problems showing on diagnostics.
Any ideas? Not happy as we are due to take on holidays in 2 weeks
